It worked. Last week's menu that is. Everyday I managed to stick to what I had planned. We ate at home and not out. Which I consider to be quite an accomplishment given the fact that we had an extra activity every single evening. Ugh! I'm hoping that this week is not a repeat performance. I even managed to take my lunch to work with me each day except Wednesday which was planned.
The Beefy One-Pot Dinner was a hit and one of the easiest meals I prepared. We were at the table and ready to eat in 30 minutes. That's fast. As I was making the menu for this week I decided it's probably time to rotate stock again; using what we have on hand. Basically, clean out the pantry and freezer.
