The Olympics have started and the tv has become a large magnet! During the opening ceremony, Lawman informed the girls that they'd be on their own until they were over. Apparently, over the years, he's picked up on how addicted I am to them.
Last week my menu post lacked a plan. I was complaining that it was too hot to cook or eat so I was contemplating a week of cold liquids and ice cream. Fortunately for my family, a cold front moved through late in the week so our temps have been 10-20 degrees cooler. What a relief!
This week I have a plan. Here it is.
Monday - Pasta primavera w/carrots, zucchini, onions and mushrooms.
Tuesday - Breakfast Casserole
Wednesday - Roasted Tomato & Chickpea Curry
Thursday - Philly Cheesesteak Sandwiches, Coleslaw
Friday - Elephant Dip w/apples, popcorn
Elephant Dip is a new recipe for me. It's a favorite of my friend Kim's family. B3 and I were at her house one evening last week when she had made this. We tried it and knew we had to make it. It's about 1 c. of peanut butter mixed with 4 oz. cream cheese, 1/4 c. of milk and 1 c. powdered sugar. We'll be dipping apple slices in it and if you dip the popcorn in it, you get a nice mix of sweet & salty.
