I like preparing meals for my family. Entrees, no problem. What I don't like is having to come up with side dishes to go with them. I struggle with that. That's why I keep it simple -- salad, steamed veggies, bread. Serving the same thing gets boring though.
I found a side dish this weekend that is quick, easy and delicious. Lemon Linguine. I served it with grilled salmon and steamed green beans.
It takes just a few minutes to prep and about 15 minutes to prepare. Doesn't get much simpler than that, does it?
It was so good in fact that I want to try it again as the main course. You could add shrimp to it or serve a grilled chicken breast on a bed of it. It would be good with asparagus or broccoli in it too.
Lemon Linguine
8 oz. dried linguine
1/4 c. minced onion
2 cloves garlic, crushed
1 T butter or margarine, melted
8 oz. sour cream
1 T milk
1 1/2 tsp. lemon pepper seasoning
1/4 tsp. salt
2 T grated Parmesan cheese
2 T chopped fresh parsley (or dried if you don't have fresh)
Cook linguine according to package directions; drain and keep warm. Saute onion and garlic in butter in a skillet over medium high heat until onion is tender. Stir in sour cream and next 3 ingredients; cook 1 minute. Remove from heat. Toss with linguine. Sprinkle with cheese and chopped parsley. Makes 4 side dish servings.

I struggle with sides, too! I consider myself a good cook but I can never come up with side dishes. Bread, fruit, veggies, that is the typical. I'll have to try this one, it looks like something my family would like.
