Cook Once, Eat Twice


Saturday night tacos can become Sunday night's dinner.......adding cooked lentils to the taco meat can stretch it, allowing for one more meal. Sunday night dinner was choice of super nachos or taco salad. Getting one more meal out of already prepared foods allows me one more easy night in the kitchen.

I have been sprouting my lentils and garbanzo beans lately and have really enjoyed the results. Better digestibility, fewer carbs, more nutrients, cute little tails :).

I love it! It's amazing how happy it can make me to cook, say, a large pork roast for pulled pork one night and then have enough left over (on purpose) to have pork chimichangas the night after. Easier AND easier on the pocketbook!

i'm trying to do more of this. besides the oh, let's have this all over again deal.

now i need a recipe for all the leftover egg yolks from dinner tonight.
