frittata: a very forgiving recipe


I had one of those days today...it didn't go as planned. I had intentions of going to the grocery store after work today. I changed my mind at 5:00. Too tired which means I would have had problems focusing on the task at hand. I would have blown my budget too because I would have been tempted by convenience foods. So, I called Lawman and told him I was coming home.

Standing in the kitchen, I placed my hands on my hips and said, "Well, what are we going to do for dinner?" When in doubt, or no plan, I usually do breakfast for dinner.

Tonight it was a frittata. Frittata's are very forgiving. You can start with a basic recipe , an oven proof skillet and substitute the list of ingredients with ingredients that you have on hand. Just follow the process and all will be well. That's what I did tonight -- 2 red potatoes, 1 onion, half a bag of baby spinach, 1/2 lb. bacon and 8 eggs. Add simple sides of toasted mini-bagels with strawberry jam, mandarin oranges and you've got a good dinner. No one will be the wiser that your cupboards are nearly bare.

I fall back on breakfast all the time, too. I've never made a frittata though...I think it's high time I tried! Sounds delicious!

Frittatas and omelettes are a great way to use up leftover meats and veggies. We had a frittata Sunday night with some tomatoes that were starting to go a little soft, some leftover purple onion from my veggie sandwich supplies (since I haven't been home for lunch)which I caramelized first, and some leftover crash hot potatoes (my twist on PW's recipe). I would have loved to add some spinach and mushrooms, but I didn't have any.
