food confessions

I love it when people tell it like it is. Especially in blog world. That's what I'm doing. Keeping it real.

I'm all about eating healthy. I prefer whole foods over frozen, processed foods. I prefer cooking from scratch. I read lables and I like it when I can pronounce everything on it.

Now let me also say that sometimes my time is of the essence. There are nights where the calendar is packed, the natives are hungry and restless, and I don't have 30 - 45 minutes to cook a meal. Those are also the nights where I am willing to prepare a convenience meal at home in lieu of visiting a fast food restaurant.


I've read a couple of food confessions recently which tell the writer's story of falling short of their ideals in the kitchen. They included Hamburger Helper and Pop Tarts. And they put me at ease. They made me smile. It's nice knowing that I'm not the only one who falls short of my ideals once-in-a-while. We're all in this together right? Doing the best we can given the situation.

So as I was preparing dinner tonight I decided that I may as well come clean. Velveeta was an ingredient in our dinner. I know. It's not real cheese. It's processed cheese. Fake. Artificial. Unhealthy. I get that. It is also creamy. A comfort food from my childhood.

Everything in moderation, right? That's what it's all about. Moderation. It might win me a mom of the year award though because the girls love it.

Velveeta may not be real...but it is REAL GOOD! lol!! Total comfort food...my mom makes a mean cheese sauce for cauliflower at Thanksgiving with that big ol' block of...fake...goodness.

Cheese is cheese. I love it natural, processed, hard, soft, blue cheese and even red leister cheese. So I'm sure if it's a meal with cheese and spaghetti I would love it!!!

How can you make nacho dip without Velveeta (or store brand substitute)?!? It's okay to have nachos for supper once in a while, right?

i thought of you yesterday! my mother brought over some vintage good housekeeping magazines and one of them had an old ad for Velveeta in it. I just might have to post it. Those old ads are priceless.
