a new month / a new menu plan

January has been a doozie of a month. Between losing my dad and Lawman's episode, the last week has been most difficult.


Monday begins a new month. I hope it's uneventful. I could do with 28 days of nothing out-of-the-ordinary.


And with beginning a new month comes the need for me to organize myself in the kitchen. Namely, a menu plan.


Lawman and I did a grocery run a couple of days ago. We allotted ourselves the usual $225 for 2 weeks. We spent $123. Hmmm....I'm pretty sure that means I forgot several items.


The following are the dinner meals through February 7th. I don't usually plan side dishes but I always have salad fixings and veggies on hand. I just kind of fly by the seat of my pants other than the entree.


French Bread Pizza (I used to make french bread pizza regularly but haven't in ages. Read this post and it inspired me to make it again.)

Beef Stew w/potatoes, carrots

Chihauhau Chili

Crescent Chicken Ring

BBQ Chicken Meal (crockpot)

Pulled Pork Sandwiches (My boss, bless his heart, brought over 3# of shredded smoked pork.)

Chicken Noodle Soup (leftovers from Lawman's episode)

Fried Polenta, Scrambled Eggs, Bacon

I don't have a dinner plan for this week yet, but I've been eating veggie sandwiches for lunch just about every day this past week and that will continue this week. I'm planning to do a post if I ever get the kitchen cleaned up enough to take pics and if I don't get sidetracked. Basically, I spread some store bought pesto on two slices of whole grain bread and lay them face up on a broiler pan. Then I put several layers of veggies on each piece of bread: tomatoes, purple onion, peppers (yellow, orange, or red), a few black olives, a few Spanish olives. Then I put it under the broiler on low until the veggies are just tender enough and before the edges of the bread get burnt. Finally I top each side with a little mozzarella and put it back under the broiler until the cheese is melted. These are so wonderful! I could eat them all the time. My 15yods loves them, too. I've never been big on veggies, but these have so much flavor. That pesto and the few Spanish olives along with the mixture of veggies really does it. Yesterday I found that since I use the bigger bread, I could really do with just half a sandwich for lunch and eat the other half at dinner.

it's cold here. $123? how did you manage that.

girls went with me this week, so we went over, but it was fun.

@Jenni - those veggie sandwiches sound delish. I think I could eat them every day.

@underthebigbluesky - Like I said, I'm pretty sure I forgot several items but I haven't discovered them yet. Check back in a couple of days! Your chili & soup sound good.

French bread pizza sounds great - and so do Jenni's veggie sandwiches. I like your idea of menu posting. I'm always needing ideas.

Dave and I did "new recipe Tuesdays" and would alternate on finding and preparing new recipes, but we quit that when I broke my foot last summer and we never got started back at it.
