Batch Cooking

Rachel discussed menu planning earlier this week and today is discussing batch cooking.

I've done batch cooking before where I've spent a mega cooking day in the kitchen and had a well-stocked freezer by the end of the day. It's not my preferred method. I would rather cook once and use the leftovers in other recipes/meals.

Here's my favorite recipe for batch cooking.

Three Packets + A Roast*
1-4lb. pork roast (cheaper cut of meat here is fine)
1 packet each: ranch dressing mix, Italian salad dressing mix, pork gravy mix

Place the roast in a crock pot and sprinkle the packets over it. Pour 3/4 c. water over the roast. Cook on low for 8 hours.

Meal 1 - Serve with baked or mashed potatoes and a salad or your favorite steamed veggie.

Meal 2 - Shred and serve on sandwich roll with bbq sauce, pickles and sliced onion. We like this with coleslaw and baked beans.

Meal 3 - Serve in burritos with rice, beans, chopped peppers, onions and shredded cheese.

All you people out there listen up! This is the BEST and EASIEST recipe! Especially when shredded and served on buns... great way to feed lots of people. Nancy was nice enough to share this with me 2 or 3 years ago, and I get requests for it all the time!
