Menu Plan Monday | February 8 - 14


Last week's menu didn't get used as planned. We had too many extra activities on the calendar for me to cook in the evenings so we relied on leftovers from the freezer. What a lifesaver they were. We also had a sick gal for 2 days so that threw a wrench in the plan as well. Several of the entrees I had planned for last week have moved to this week since I had all the ingredients on hand already.

I made a new recipe this weekend, Lemon Linguine. Absolutely to-die-for. Everyone liked it. I know it was way good because Lawman was caught cleaning the pan with his finger! I served it as a side dish with grilled salmon and sauteed green beans. I think it would be a great main dish with some little shrimpies added to it. You could add asparagus or broccoli to it as well or just keep it simple by adding a salad and garlic bread and you've got a complete meal. I'll be posting this recipe later this week.

Today I roasted a turkey. I purchased 2 over the holidays because they were such a great price. I served it tonight with baked potatoes and salad. I also chopped some and placed in 2 cup portions in the freezer for later. There's leftovers in the fridge for yummy turkey sandwiches this week for lunch.

Here's what I have planned for this week in no particular order. I don't usually include my side dishes here but I always have easy sides that I can add as needed -- salad, steamed veggies, fresh veggies + dip, fruit, and bread. Although it may look like there's not a lot of vegetables and fruits on the menu items listed, we do eat plenty of them. Our 15 year old daughter has commented several times on how many more fruits & veggies we eat than her friends and their families. She usually takes leftovers to school for lunch; her homecooked meals provide a topic for conversation. I'm always amazed by the conversations they have about food.

Excellent menu. I've never made Mexican pizza! I'll have to come up with my own version of this!
