Breakfast ~ a good way to end your day

Breakfast is one of my favorite meals. A big breakfast. Like most families, we don't have time for this on a typical weekday morning. Instead, I make breakfast for dinner 2 or 3 times a month.

Tonight I made a Ginger Peach Sauce to go with our pancakes. Quite tasty. Easy peasey too.

Ginger Peach Sauce
1-1lb. pkg of frozen peaches (no sugar added)
1/2 c. sugar (I used organic)
1/2 tsp. ground ginger
2 tsp. lemon juice
1/4 tsp. cinnamon

Combine all ingredients in a 4c. glass measuring cup. Cover with wax paper and microwave on high for 5 minutes. Gently stir. Microwave for another 2-3 minutes or until the mixture is bubbly and the peaches are cooked.

Cool slightly. Transfer about half of the mixture to a blender and puree it. Stir the puree back into the container. You can refrigerate it to allow the flavors to blend and then heat it when you're ready to eat or eat it right away. That's what we did.

I've got a little leftover so I think I'll try it in my oatmeal tommorow morning.

yes, but we have not in a while. usually on Saturday nights. your peach sauce looks real good.

Wow! That looks really good. My gang likes pancakes but they usually like savory rather than sweet stuff. Alot of times I take those packaged hashbrowns (from the dairy section) and brown them in a non-stick skillet with ham, onions and peppers (or no peppers for the pepper hater). After everything is crispy, take and make a little nest in the hashbrowns for as many eggs as you want to cook and then break an egg into the little opening. This kind of makes a poached type egg without the water. Can sprinkle a little cheese on top of each egg or just section out with hash browns and eat as is. My kids think this is genius but it couldn't be simpler.

We had scrambled eggs and buttermilk pancakes (from scratch) just last night!

When the kids were younger, I remember making pancakes one morning on a weekend, and one of the boys said, "pancakes for breakfast?!" And I wonder why they are the way they are!! :)

Nancy, how many does this serve? My husband works at the Union Gospel Mission and they just got 41 cases of frozen peaches (24 pounds per case!) My hubby is wanting me to email this recipe to him at work. WOOHOO, you'll be famous here in Spokane.
